Ingredients
For rice
- 3 cups Basmati rice
- 4 clove
- 6 pepper
- 8 cardomom
For koftas
- 6 egg boiled
- 750 gm chicken mince
- 1 tsp gingergarlicpaste
- 1/4 tsp cumin powder
- 2 greenchilli chopped
- 1 tsp coriander powder
- 1 tsp redchilli powder
- 1 tsp garam masala
- 5 tbsps onion chopped
For Masala
- 4 tbsps ghee
- 1 bay leaf
- 3 cardomom
- 8 Peppercorns
- 1/4 tsp cumin powder
- 4 Cups onion sliced
- 1 tbsp gingergarlicpaste
- 2 greenchilli
- 2 tomatoes
- 2 tsps redchilli powder
- 1 tbsp coriander powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- 1/2 cup curd
- 1 tsp shajeera
- mint leaves
- coriander leaves
- pinch saffron of
- 4 tbsps milk
- to taste salt

Instructions
- Boil the rice along with whole masalas and salt until 3/4th done .drain and keep aside
- For koftas add all the ingredients in a blender and process it until well combined.refrigerate this mix for 15 mins
- Make 6 balls out of it.Take a ball flatten it place a boiled egg in it and cover nicely and make koftas.make sure that no crack is dere.repeat this with other balls.
- Deep fry this balls until brown and cooked
- Deep fry the onions until golden brown and crisp
- For masala heat a pan add ghee , whole spicesand saute till aromatic add fried onion in it then add a little water then add gingergarlicpaste , greenchilli saute for it then add tomatoes along with it add curd red chilli powder,turmericpowder,coriander powder and cook it until thick
- Add in garammasala, corianderleaves,mintleaves then carefully add fried koftas and cook for 10 mins until gravy get infused in it
- soak saffron in milk
- For dum process take a wide pan add 1/4cup rice at the bottom sprinkle saffron milk here and there then add tbsp of ghee then layer it with masala followed by rice amd masala finally at the top.add remaining saffron milk ghee chopped corianderleaves fried onions and pinch of Garam masala..then close and cook for 15 mins ...
